As many of you know if it came down to it I would choose to live off of Mexican food for the rest of my life. With that being said since moving back to Michigan I have been on the lookout for the best tacos in town that I can get my hands on.
In a Lansing Foodies group, someone posted about Birria Tacos, a taco I was not familiar with so of course, I made it a mission to research places in Lansing that served this, and over this weekend I finally got my chance to try out Taqueria El Chaparrito on the West side of Lansing.
I really didn’t know 100% what to expect from this taco, except everyone said that it was amazing. I ordered the 3 taco meal with beans and rice and was not let down. However I was expecting the sauce to have a bit more heat, but the overall flavors were great.
Michaels wife recently made some homemade Birria tacos using the Instant Pot, she was kind enough to pass along the recipe which I hope to try this coming Taco Tuesday.
